flax seed binder (egg substitute)

yields: about 1 cup (4 egg substitutes)
1/4 c (4 tbsp) flax seed meal (ground flax seed)
3/4 c water
1. mix ingredients in a small pan and bring to a boil. boil for 3 minutes while stirring.

if you don't heat up the mixture, at the least, allow the flax seed meal to soak in the water before using, fully absorbing it. you should end up with a thick, gelatinous goo.
2. remove from heat. store binder in a glass container with a lid.
3. sub 1/4 cup of flax seed binder for one egg in baked goods.
1:3 ratio for ground flax seeds:
1 tbsp of ground flax seeds + 3 tbsp water = 1 egg

1:4 ratio for whole flax seeds:
1 tbsp of whole flax seeds + 4 tbsp water = 1 egg (
grind up flax seeds first before adding to water)
