Chicken Parmesan

Modified from Trim Body System
Easy to cook - while chicken is cooking, cut veggies.
Makes 1 serving, but recipe doubles or quadruples easily.
Ingredients
2 tsp olive oil
3 oz chicken breast
1/2 cup sliced zucchini
1/2 cup diced green pepper
1 cup diced onion
1 Tbsp Italian seasoning
Salt and pepper, to taste
1/2 cup bottled marinara sauce
1 Tbsp grated Parmesan cheese
whole wheat pasta, cooked al dente (optional)
seasonings for chicken (optional - e.g. onion powder, garlic powder, pepper)
 
Directions
1. Drizzle olive oil into a nonstick pan.
2. Cook the chicken breast over medium heat until it turns white and opaque, turning frequently. When done, remove to plate and keep warm.
3. Add the vegetables; stir and cook until tender-crisp.
4. Add chicken back in. Sprinkle with seasonings. Add the marinara sauce; cook until heated through, about 5 minutes.
5. Sprinkle with Parmesan cheese and serve.
