Fried Rice

Amounts here are approximate.  Keep adjusting until it tastes right!
2-3 cups cooked rice (e.g. leftover steamed rice)
2-3 eggs, beaten
frozen mixed vegetables or leftover veggies
soy sauce
1/8 tsp garlic powder
dash ginger powder
cooked cubed tofu or meat, e.g. lunchmeat, leftover chicken, etc.
1 Tbsp peanut oil or sesame oil
1 Tbsp sugar (optional)
dash sesame oil (optional)
dash fish sauce (optional)
1. In large nonstick skillet or wok, heat oil over medium-high heat.  Scramble eggs until almost cooked.
2. Before eggs are done, add rice and mix. Add meat and veggies and mix. Add seasonings and mix well.  Adjust seasonings as desired, e.g. add enough soy sauce to get the color and flavor you want.  Keep heating and stirring until heated through.
If you're using freshly cooked rice, wait about an hour for it to cool down first if possible.
