Breakfast Cheesecake

  • Currently 4/5
You can choose to make the night before; let sit at room temp. for 30 min. prior to baking...via my Aunt Jane and reminded again by Paula Deen's kids cookbook.
2 cans crescent rolls
2 8 oz. pkgs cream cheese, softened
1 1/2 cup sugar, divided
1 tsp vanilla
1 stick melted butter
2 tsp cinnamon
1. Spray 13 x 9 pan with nonstick spray. Preheat oven to 350 if baking right away; can refrigerate overnight and bake in the morning.
2. Spread one can of rolls out onto bottom layer of pan. Press out to attach at the lines as best as you can.

3. Beat softened cream cheese, 1 cup sugar, and vanilla until smooth.  Spread carefully onto bottom layer.
4. Unwrap 2nd can of rolls and carefully push and pull untill they're together as a top layer.
5. Pour melted butter over top. Combine remaining sugar and cinnamon together and sprinkle over the top.
6. Bake 35 to 45 minutes until brown.
7. Cut into squares and serve.
This is an excellent dessert too. For a brunch, serve warm with mixed berries. It is such a hit every time!
