Apple and Raisin Oven Pancake

This is a delicious and easy brunch or weekend breakfast....
1 large baking apple, cored and thinly sliced
1/3 cup golden raisins
2 Tbsp packed brown sugar
1/2 tsp ground cinnamon
4 eggs
2/3 cup milk
2/3 cup all-purpose flour
2 Tbsp margarine or butter, melted
Powdered sugar (optional)
Raspberries and fresh herb (optional)
1. Preheat oven to 350 degrees.  Spray 9 inch pie plate with nonstick cooking spray.
2. Combine apple, raisins, brown sugar and cinnamon in medium bowl.  Transfer to prepared pie plate.
3. Bake, uncovered, 10-15 minutes or until apple begins to soften.  Remove from oven.  Increase oven temperature to 450 degrees.
4. Meanwhile, whisk eggs, milk, flour and margarine in medium bowl until blended.  Pour batter over apple mixture.
5. Bake 15 minutes or until pancake is golden brown.  Sprinkle with powdered sugar, if desired.  Garnish with raspberries and herb, if desired.
