Apple Coffee Cake

A deliciously moist coffee cake using canned apple pie filling....
2 cans apple pie filling
1/4 cup orange juice
1-1/2 tsp ground cinnamon
1 cup sugar
1/2 cup stick margarine, softened
1 cup egg substitute
1/4 cup fat-free milk
3 cups sifted cake flour
2 tsp baking powder
1/4 tsp salt
2-1/2 tsp vanilla extract
Cooking spray
2 Tbsp brown sugar
1. Preheat oven to 350 degrees.
2. Combine apple pie filling, and cinnamon in a bowl; stir well, and set aside.
3. Cream sugar and margarine at medium speed of a mixer intil light and fluffy (about 5 minutes).  Add egg substitute; beat 4 minutes at medium speed or until well blended.
4. Combine 1/4 cup orange juice and milk; set aside.  Combine flour, baking powder, and salt.  With mixer running at low speed, add flour mixture to creamed mixture alternately with milk mixture, beginning and ending with flour mixture.  Stir in vanilla.  Pour half of batter into a 10-inch tube pan coated with cooking spray; top with half of the apple mixture.  Pour remaining batter into pan; top with remaining apple mixture, and sprinkle with brown sugar.
5. Bake at 350 degrees for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.  Let cool in pan 10 minutes; remove from pan, and let cool on a wire rack.
