Baked Oatmeal

This is a delicious and healthy version of baked oatmeal - it has the consistency of a giant soft chewy warm oatmeal cookie bar!

Ingredients
3/4 cup vegetable oil
1 cup brown sugar
1 cup sugar
4 eggs, beaten
4 tsp baking powder
5 cups oatmeal, uncooked
2 tsp salt
1-1/2 cups milk
1 tsp vanilla
1 tsp cinnamon
1 cup raisins
 
Directions
1. Preheat oven to 350 degrees.  Cream together the oil, sugars, and eggs.  Add all other ingredients; combine.
2. Pour into a 9 x 13 " baking dish sprayed with Pam.  Bake for 30  - 45 minutes until set.
 
Notes:
Serves:  12

May easily half recipe and bake in 8 x 8" baking dish.
Or, divide original recipe into two  8 x 8" dishes, bake, and freeze one after cooking to reheat later !!
