Baked Sweet Potato (Regular Potato) Fries

A family favorite - naturally sweet and crunchy.
3 large sweet potatoes (or baking potatoes)
Olive oil
Salt and pepper to taste
Garlic salt and paprika (optional)
1. Preheat oven to 400 degrees.   Line baking pan with foil and set aside.
2. Peel potatoes if you wish.  Slice into wedges or matchsticks.  Place in mixing bowl.  Drizzle potatoes with olive oil, sprinkle with salt and pepper (and garlic salt and paprika if using).  Toss well until all potaoes are coated.  Spread potatoes evenly on baking pan sprayed with Pam, bake 15 minutes then stir potatoes.  Bake another 3/4 hours, stirring every 15 minutes or until desired crispiness is reached.  Serve hot.
Serves:  3

Recipe easily doubles - may combine half baking and half sweet potaotes.
