This recipe is a "Little Italy Favorite" from Maggiano's Restaurant - our family's favorite Italian restaurant to go to...
16 oz Ziti pasta
2 oz Olive oil
1 lb ground Italian sausage
2 Tbsp minced garlic
1 cup white wine
1 (14.5 oz) can diced tomatoes
20 oz canned or fresh marinara sauce
1 oz butter
1 oz chopped basil
8 oz shredded Mozzarella cheese
8 large slices Provolone cheese
3 Tbsp grated Parmesan cheese
1 basil sprig
1. Place Ziti pasta in boiling water and cook as stated on back of packaging or until your desired al dente.
2. Place olive oil into a heated saute pan over medium-high heat and cook the Italian sausage.  When sausage is almost cooked, add garlic and continue cooking for 30 seconds.
3. Add white wine and bring to a simmer, reducing the wine until almost completely dry.  Lower heat to medium, add the diced tomatoes, marinara sauce, butter and chopped basil; combine.
4. Remove from heat, and add cooked pasta and half of the Mozzarella; toss to blend.  Transfer half of pasta mixture to a 9 x 13" baking dish; top with 4 slices Provolone cheeses. Cover with remaining pasta mixture, and top with remaining Mozzarella and Parmesan cheese.  Place remaining 4 slices Provolone on top.
5. Bake at 400 degrees until heated through and cheese is melted, approximately 15 minutes.  Place underneath broiler for approximately 2 to 3 minutes until cheese is bubbly and golden brown.  Garnish with basil sprig and enjoy !!
