Beer Butt Chicken (Grill or Oven)

A whole chicken is seasoned and slowly cooked on the grill (or in the oven).  This is a bit unorthodox, but the end result is moist, flavorful, and amazing !!
3 1/2 - 4 lb chicken
Potato or onion
Rub - on seasoning
1/2 can beer
1. Thaw and clean a whole chicken, removing giblets form cavity.  Rinse chicken under cold water, drain, and blot dry with paper towels.  Generously apply a rub - on seasoning to outer skin and inner cavity.  If not available, use salt and pepper. 
2. Pour out (or drink) half of the can of beer.  Place chicken over half-empty can of beer.  Stuff potato or onion in neck cavity to seal in vapors.  Place on a grill set for indirect heat (place in a foil pie-pan with 1/2 cup water to prevent flare - ups).
3. Grill chicken covered for 1 - 2 hours until skin is dark golden brown and very crisp.  When done, using a tongs and a fork, carefully transfer the chicken and the beer can in its upright position to a platter.  Let stand for 10 minutes. Carefully remove the chicken from the beer can, taking care not to spill the hot beer. 

4. Carve chicken and serve.

May roast in oven at 350 degrees in roasting pan for 1 - 2 hours.
