Bran Muffins

A  great way to get your daily fiber...and delicious, too !!
1-1/2 cups unprocessed wheat or oat bran flakes, or a combination
1 cup dried currants or raisins
1/4 cup molasses
1/4 cup honey
1 cup low fat buttermilk
2 eggs, lightly beaten
1/2 cup vegetable oil
1 tsp vanilla extract
3/4 cup unbleached all purpose flour
1/4 cup whole wheat flour
1-1/2 tsp baking powder
1/2 tsp baking soda
1-1/2 tsp ground cinnamon
1/2 tsp freshly grated nutmeg
1/2 tsp ground allspice
1. Combine the bran flakes, currants, molasses, honey, buttermilk, eggs, oil, and vanilla extract in a large bowl.  Stir well.  Let stand to soften the bran, at least 20 minutes, or cover and refrigerate as long as overnight.
2. Preheat the oven to 425 degrees.
3. In a medium sized bowl, combine the flours, baking powder, baking soda, cinnamon, nutmeg, and allspice, stirring to blend.  Add the dry mixture to the moistened bran mixture, stirring just enough to blend together.  Spoon into greased muffin tins, filling about 3/4 full.  Bake until browned, 15-20 minutes.  Remove immediately from tins and cool briefly on a wire rack.
