Broccoli Rice and Cheese Casserole

You can add chopped, cooked chicken or ham to this dish for a complete meal.....
1/2 cup chopped onion
1/2 cup chopped celery
1 large pkg frozen broccoli
1 large pkg Velveeta processed cheese, cut into cubes (may use light)
4 cups cooked white rice
1 can cream of mushroom soup (may use low sodium or reduced fat)
1 can cream of chicken soup (may use low sodium or reduced fat)
1. Pre-cook broccoli and rice separately.  Set aside.
2. In large saucepan, melt 2 Tbsp butter and saute onions and celery.  Add both soups and cubed processed cheese; stir until melted.  Fold in broccoli and rice. 
3. Pour into ungreased 9 x 13" casserole dish and heat uncovered for 30 minutes at 350 degrees. 
Serves:  8

May divide into two 8 x 8" casserole dishes - heat both, and freeze one for later use.
