Cheese Blintz Casserole (7 x 11")

An easy and delicious substitute for individual cheese blintzes !!!
Ingredients
4 large eggs, divided
1/2 cup sugar, divided
2 (8-oz) pkgs cream cheese, softened
1 (15-oz) Ricotta cheese
2-1/2 tsp lemon juice
1 stick (1/2 cup) butter or margarine, softened
1-1/4 cup flour
1 tsp baking powder
3/4 cup milk
 
Directions
1. Beat 2 eggs, 1/4 cup sugar, and next 3 ingredients at low speed with an electric mixer until blended; set aside.
2. Beat butter and remaining 1/4 cup sugar at medium speed until fluffy.  Add remaining 2 eggs, mixing well.  Stir in flour and baking powder alternately with milk.  Pour half of the mixture into a greased 11 x 7 " baking dish.  Spoon cheese mixture on top, and pour remaining butter mixture over cheese mixture.
3. Bake 350 degrees for 45 minutes. 
 
Notes:
Serves:  8 - 10.

Serve with fresh fruit, or canned pie filling over top.
