Cheese Blintzes

Folded pockets of sweet cheese filling nestled in thin crepes...delicious topped with your favorite fruit.
2-1/2 cups creamed cottage cheese
1 (4-oz) pkg cream cheese or 1/2 (8-oz) pkg
5 Tbsp Splenda
1/2 tsp almond extract
1/8 tsp ground cinnamon
2 large egg yolks
12 sweet crepes, cooked on one side only
Cooking spray
3/4 cup jam or fruit puree (applesauce/pie filling)
1/4 cup sour cream
1. Combine cottage cheese, cream cheese, Splenda, almond, extract, cinnamon, and egg yolks in a medium bowl, whisking until well blended.
2. Lay crepes, cooked side up, on flat surface.  Spoon 1/4 cup cheese mixture near the top of the crepe, then fold envelope fashion.  Place blintz, seam-side down, on wax paper and continue until all blintzes are folded.
3. Heat a nonstick skillet or griddle over medium-low heat.  Spray with cooking spray and add blintzes, seam side down.  Cook until golden brown, about 2 minutes per side.  Serve with jam or fruit puree and sour cream.
Serves:  6 (2 blintzes per serving)
