Cheese-Grits Casserole

A great brunch side dish..easy to prepare, and quick to disappear !!
Ingredients
4 cups water
1 tsp salt
1 cup quick cooking hominy grits
1 cup shredded Cheddar cheese (about 4 oz)
1/4 cup margarine or butter
2 eggs, slightly beaten
 
Directions
1. Heat water and salt to boiling in 3-quart saucepan.  Gradually stir in grits.  Heat to boiling; reduce heat.  Simmer uncovered, stirring occasionally, 5 minutes; remove from heat.  Stir in cheese, magarine and eggs.  Pour into ungreased 1-1/2 quart casserole.  (To serve immediately, cook uncovered in 350 degree oven until light golden brown, about 50 minutes.)  Cover and refrigerate no longer than 24 hours.
2. TO SERVE:  About 55 minutes before serving, cook Cheese-Grits Casserole uncovered in 350 degree oven until top is firm and cracks are dry, about 50 minutes.
