2 cups raw Minute rice
2 pkgs dry onion soup mix
2 cans cream of mushroom soup
2 soup - cans of water
Chicken thighs or breasts (boneless-skinless) or pieces, to fit in baking pan
1. Preheat oven to 375 degrees.  Spray Pam on 9 x 13" casserole dish.  Spread rice on bottom of baking dish.  Sprinkle  with dry onion soup mix.  Place chicken pieces on top.  Salt chicken lightly. 
2. Combine cream of mushroom soup and water - whisk to combine.  Pour over chicken pieces, lifting pieces to cover rice completely.  Cover, bake for 1 1/4 hours.  No need to watch. 
3. Stir rice prior to serving.
