Chicken Pasta Caprese

In the summer, I use fresh grape tomatoes and basil straight from my garden....
1/2 lb spaghetti or angel hair pasta, uncooked
1/2 cup Kraft Italian salad dressing
1 onion, finely chopped
2 cloves garlic, minced
3 cups halved cherry (or grape) tomatoes
1 cup shredded Mozzarella cheese
1/3 cup fresh basil, finely sliced
2 cups cooked chicken breast, cut into 1" pieces
Parmesan cheese (optional)
1. Cook pasta as directed on package.
2. Meanwhile, heat dressing in large nonstick skillet on medium - high heat.  Add onions and garlic; cook and stir 2 minutes.  Add tomatoes and cooked chicken; cook 5 minutes or until heated through, stirring occasionally.
3. Drain pasta and add to tomato / chicken mixture; mix lightly.  Sprinkle with shredded cheese and basil; toss before serving.
4. May sprinkle with Parmesan cheese if desired
Serves:  4 (1-1/2 cup servings)
