Chicken (Veal) Parmesan

A healthier, baked version of the classic Italian dish made with either chicken or veal and served over hot pasta...
1 packet Shake and Bake for chicken
8 chicken (or veal) cutlets or 4 medium boneless, skinless chicken breasts (or 6 small) - (about 1 1/2 pounds total)
2 cups jarred Spaghetti Sauce - more if you like additional sauce on your pasta
1 cup shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
Hot cooked Spaghetti or Angel Hair pasta
1. Preheat oven to 400 degrees.  Spray baking dish with Pam.
2. Coat chicken (veal) pieces according to Shake and Bake packet directions.  Place coated pieces in baking dish.
3. Bake chicken (veal) uncovered in oven for 20 - 30 minutes until cooked through.
4. Top chicken (veal) pieces evenly with Spaghetti Sauce, using additional sauce if preferred.  Sprinkle evenly with Mozzarella cheese and sprinkle with Parmesan.  Return to oven , uncovered, for an additional 5 - 10 minutes, until sauce is heated through and cheese is melted and begins to brown slightly.
5. Place hot pasta on plate.  Top with chicken (veal) portion and sauce. 
Serves:  4 - 6

Note:  to round out the meal, add garlic bread and a green salad....
