Classic Tuna Noodle Casserole

Comfort food at its finest....a quick recipe that is as easy as it is delicious....
1 package egg noodles
1 can tuna, drained
1 can cream of mushroom soup
1 cup milk
1 small onion, chopped
1 can peas, or mushrooms, drained
3 cups grated Cheddar cheese
1 cup crushed Ritz crackers
2 Tbsp margarine
Salt and pepper to taste
1. Preheat oven to 400 degrees. 
2. Cook the egg noodles in salted water until al dente, according to package directions; drain.
3. Mix drained pasta with the tuna, cream of mushroom soup, milk, shredded cheese and onion in a casserole dish.  Add salt and pepper to taste.
4. Saute crushed crackers in melted butter until coated.  Sprinkle the crushed crackers over the top of casserole and bake for 20 minutes, until topping is browned and casserole is heated through.
Serves:  6 - 8

May substitute canned salmon for tuna - delicious !!
