Cornbread Casserole

This delicious "spoonbread " recipe is from my friend and coworker Margaret. Easy to prepare, it combines canned corn and packaged cornbread mix with eggs, sugar and sour cream for an easy Southern side dish.
1 can kernel corn, drained
1 can creamed corn
1/4 cup Olive oil
1/4 cup sugar
2 eggs
8 oz sour cream (may use fat free)
1 box Jiffy Cornbread mix
1.  Mix all the above ingredients together until combined.  Pour into an 8" x 8" pan that has been sprayed with Pam.
2. Bake  at 350 degrees for 50 minutes or until firm.  Spoon out to serve.
Serves:  4 - 6

This recipe is easily doubled for a 9" x 13" pan (serves: 8 - 12)
