Country Egg Scramble

A hearty breakfast dish for the men in my family.
12 eggs
4 cups peeled, chopped potatoes (about 3 - 4 potatoes)
1/4 cup milk
2 cups shredded cheese: American, Cheddar, Swiss, Mozzarella
1 large onion, chopped
1 green pepper, chopped
2 cups cooked, chopped ham
3 - 4 Tbsp olive oil
Salt and pepper to taste
1. Heat olive oil in 12" skillet.  Add potatoes and onion, cooking and stirring occasionally until potatoes are cooked through and onions are soft. 
2. Whisk together eggs and milk.  Pour over potatoes and onions in skillet.  Cook and stir until eggs begin to firm up;  add shredded cheese and remaining ingredients.  Continue stirring until eggs are of desired consistency.  Add salt and pepper to taste.
