Creamy Rice Pudding

Rice is combined with milk, sugar, cinnamon and raisins, and flavored with vanilla in this stovetop rice pudding.

1 cup rice (not minute rice)
4 cups milk
2 sticks cinnamon
4 drops vanilla
Sugar to tast (about 1/4 cup)
Golden or dark raisins (optional)
1. Combine rice and milk in saucepan; bring to boil. Add cinnamon sticks and vanilla and sugar (about 1/4 cup), stir to combine.  Simmer, uncovered, for about 1 hour until rice is cooked (soft).   If pudding becomes too thick and dry, add more milk to desired consistency.   When rice is soft, remove from heat.  Cool.

2. If using raisins, combine with pudding mixture after it is cool. 
Serves:  6 - 8

Do not cover the saucepan, as this makes the rice grow too quickly - simmer uncovered for best results.
