Traditional noodle casserole with a sweet cream sauce, fruit, and nuts.
16 oz. Reggano Wide Egg Noodles
2 cups Friendly Farms Low Fat Cottage Cheese
1 cup Friendly Farms Sour Cream
1/2 cup Southern Grove Premium Golden Raisins
1/2 cup fresh cranberries
1 cup Baker's Corner Brown Sugar, divided
6 large Goldhen eggs
2 tsp Stonemill Essentials Iodized Salt, divided
1 stick Countryside Creamery Unsalted Butter, divided
2 cups Millville corn flakes
1 cup Southern Grove Chopped Pecans
1 tsp Stonemill Essentials ground Cinnamon
1. Preheat oven to 350 degrees F.
2. Bring a large pot of water to a boil. Cook noodles for 4 minutes. Drain and set aside.
3. In a large bowl, whisk together cottage cheese, sour cream, raisins, cranberries, 1/2 cup brown sugar, eggs, 1 teaspoon salt, and 1/2 stick melted butter.
4. Add noodles and stir to incorporate. Transfer to a greased 13x9-inch baking dish.
5. Melt remaining butter. Combine in a medium bowl with remaining brown sugar and salt. Add corn flakes, pecans, and cinnamon. Crush to desired consistency.
6. Spread topping over noodles. Bake for 35 minutes, or until casserole is bubbling and topping is crisp.
