Hot Fruit Casserole

An easily assembled make-ahead hot fruit compote with the added kick of sherry....canned fruit makes this a snap to prepare.
1 medium can sliced pineapple, drained
1 medium can peach halves, drained
1 medium can pear halves, drained
1 medium can apricot halves, drained
1 jar marachino cherries, drained
2 Tbsp flour
1/2 cup brown sugar
1 stick butter
1 cup sherry
1. Drain fruit, cut pineapple, peach and pears in halves.  Arrange fruit in alternate layers in large-medium deep casserole dish. 

2. On top of double boiler, combine butter, sugar, flour and sherry; stir over hot water until smooth and thick.  Pour over fruit in casserole, cover, and let sit in refrigerator overnight.

3. Heat in 350 degree oven uncovered for 20 - 25 minutes until hot and bubbly.
4. Keeps well for several days in refrigerator.
