Hot Italian Beef Sandwiches (Crockpot)

My son Brent's favorite hot beef sandwich that he requests every time he comes home from college.
1 5# Rump roast, or Eye of Round roast trimmed of fat
Red pepper flakes, to taste
Fresh ground pepper
Pepperoncini (16-oz jar - all peppers, 1/2 juice)
1 can beef broth
1 can french onion soup
1 envelope dry onion soup mix (Lipton)
Provolone cheese slices
Hard rolls
Giardinara peppers
2 Tbsp Italian spices
1. Place the meat into a crock pot.  Season with the red pepper and black pepper.  Add the pepperoncini and juice, beef broth, french onion soup, dry onion soup mix, and the spices.  Cook on low heat 8-10 hours, or until the meat shreds easily.

2. Place Provolone cheese slice in roll and fill with beef and giardinara.  Dip in extra juice if desired.  Delicious !
