Italian Sausage Sandwiches with Peppers & Onions

My sons Ryan and Brent request these sandwiches every time they come home from college...
3 lb mild (or spicy) Italian sausage, cut into 2" pieces
1/4 cup olive oil
2 medium onion, sliced
3 peppers (green, yellow, red), cut into 1/4 inch strips
1 Tbsp oregano
1 tsp basil
2 cloves garlic, chopped (or 2 Tbsp bottled minced garlic)
2 cups canned, crushed and peeled Italian tomatoes (28-oz can)
1/2 cup dry sherry
Sandwich rolls
1. Place sausage in large skillet with 1/2 inch water in bottom.  Cook over medium heat until water evaportates.  Add olive oil and saute a few minutes until browned on all sides.
2. Remove sausage and add onions and green peppers.  Season with oregano and basil.  Saute until onions are golden brown.  Add garlic and cook 1 minute longer.  Add tomatoes.  Simmer 5 minutes.
3. Add sherry and cook over high heat until sherry is absorbed.  Add sausages to sauce during last 2 minutes.  
4. Place sausage in rolls, top with onion/peppers and sauce.  Delicious!
