Jewish Apple Cake

This recipe is from my coworker and friend Sue...a deliciously moist cake filled and topped with apples and cinnamon.
1 cup oil
1/2 cup apple juice
4 eggs
2 tsp vanilla
2 cups sugar
3 cups flour
3 tsp baking powder
6 large apples, sliced (do not peel)
Cinnamon and sugar
1. Preheat oven to 350 degrees.  Mix together first 5 ingredients in mixing bowl.  Add flour and baking powder.  Pour half the batter into a Pam-sprayed tube pan.  Top batter with 1/2 of the sliced apples, cinnamon and sugar.  Pour remaining batter over apples, and top with remaining apples, cinnamon and sugar.  Bake 350 degrees for 1 1/2 hour.  Cool completely in tube pan before removing.
