Medium White (Cheese) (A La King) Sauce

A simple white sauce made with butter, corn starch and milk. It can be used as a base for lots of dishes - add cheese or other ingredients to jazz it up....

 

 

Ingredients
2 cups cold milk
4 Tbsp margarine
1/4 tsp pepper
2 Tbsp corn starch
1/2 tsp salt
 
Directions
1. In saucepan, gradually stir milk into corn starch.  Add margarine, salt and pepper.  Stirring constantly, bring to boil over medium heat.  Boil 1 minute.
 
Notes:
White Sauce:  Makes 2 cups.

Cheese Sauce:  Stir 2 cups shredded cheddar cheese into 2 cups white sauce.  Makes 2 1/2 cups.

A La King Sauce:  Prepare white sauce, omitting margarine.  Saute 1 cup mushrooms, 4 Tbsp  sliced green peppers, and 4 Tbsp chopped pimento in 4 Tbps margarine til soft.  Add to white sauce.  Add 2 cups chopped cooked chicken to sauce, and serve over toast.  Makes 2 1/2 cups.
