Oatmeal Muffins

A simple but delicious recipe for oatmeal muffins.
1 cup rolled oats
1 cup buttermilk
1/3 cup butter
1/2 cup brown sugar
1 egg
1 cup sifted flour
1 tsp baking powder
1/2 tsp soda
1 tsp salt
1. Add oats to buttermilk and allow to set for awhile.  Cream butter and sugar, add egg and mix well.  In a separate bowl, sift together flour, baking powder, soda and salt.  Set aside.  Add oats mixture to creamed mixture and beat well.  Stir in flour mixture.  Pour into greased muffin cups, 2/3 full.  Bake in 400 degree oven for 20-25 minutes. 

Makes:  1 dozen medium-sized muffins
