Oven Roasted (or Grilled) Fish with Tangerine Relish or Almond Vinaigrette

Oven roasted or grilled, either way is a great way to enjoy your favorite fish....choose one or both toppers to add a special twist for an easy meal.
1 1/2 - 2 Lbs. center cut salmon, grouper, halibut, or red snapper, cut into 4 equal pieces
Oil (any, as needed)
Salt (to taste)
Pepper (to taste)
4 tangerines (peeled, segmented)
2 Tbsp. reserved tangerine juice
1 Tbsp. ginger
1 Tbsp. oil
1 scallion (sliced)
Salt (to taste)
Pepper (to taste)
Almond Vinaigrette
1/2 cup sliced or slivered almonds, pounded
1/3 cup canola oil
Dijon mustard (to taste)
Rice wine vinegar (to taste)
Minced garlic (to taste)
Sliced green onion (to taste)
Salt (to taste)
Pepper (to taste)
1. Take  salmon , grouper, halibut or red snapper and cut it into 4 pieces; pat them all dry.

2. Place a pan in the oven and heat it to 500° F.
3. Slice fish skin in 4 or 5 places.  Oil both sides with fingers, and add salt and pepper to each side.
4. Remove pan from the oven and set the temperature to 275° F.  Place fish into the hot pan with the skin side down.
5. Bake for 10 minutes, remove, and top with relish OR almond vinaigrette.
6. Relish:  Cut tangerines into pieces, drain them, and retain the juice (2 Tbsp.).  Combine juice, ginger, oil, scallion, salt, and pepper; add tangerine segments and combine.  Add relish to the fish once removed from the oven.
7. Almond Vinaigrette:  Combine almonds and oil.  Add remaining ingredients to taste, and combine.
Serves:  4

May also prepare fish on the grill: 
Place aluminum foil on top of the grill grate.  Shut lid and heat for 15 minutes on high heat.  Remove foil.  Oil grates 10 times with tongs and paper towel soaked in oil.  

Oil fish on both sides, sprinkle with salt and pepper.  Place fish skin side down on grates.  Flip after 5 minutes if fish releases easily.  Grill 5 - 10 minutes more until flakes easily.

Top with relish or almond vinaigrette.
