Pecan (Chocolate Pecan) Pie

My husband Tom's absolute favorite pie - I make it for his birthday every year (he prefers it without the chocolate chips).  Also a favorite request of my sons Ryan and Brent.
Ingredients
1 9" unbaked pie shell
Filling
1 cup white corn syrup
1 cup dark brown sugar
1/2 tsp salt
1 tsp vanilla
1/3 cup butter, melted
3 eggs
1 cup pecan halves
1 cup (6-oz) semisweet chocolate chips, optional, for a chocolate pecan pie
 
Directions
1. Preheat oven to 350 degrees.  Mix syrup, sugar, salt, melted butter and vanilla until combined.  Stir in slightly beaten eggs and pecans (and chocolate chips, if using) - stir until combined.  Pour into unbaked pie shell.  Bake 350 degrees for 1 hour.  Cool completely - center of pie will thicken and solidify upon cooling.

Serves:  8

Deep dish pie:  1 1/2 cups white corn syrup, 1 1/2 cups dark brown sugar, 1/2 tsp salt, 1 1/2 tsp vanilla, 1/2 cup butter (melted), 4 eggs, 1 1/2 cups pecan halves, (1 1/2 cups chocolate chips, if using).  Bake 1 hour 20 minutes.

12" pie:
  2 cups white corn syrup, 2 cups dark brown sugar, 2/3 tsp salt, 2 tsp vanilla, 2/3 butter (melted), 6 eggs, 2 cups (heaping) pecan halves, (2 cups chocolate chips, if using).  Bake 1 hour 45 minutes.
