Rhubarb Muffins

These fabulous muffins have a crunchy sweet sugar topping and are great with no extra added butter or jam.
Ingredients
1 1/2 cup brown sugar
2/3 cups oil
1 egg
1 cup buttermilk
1 tsp salt
1 tsp baking soda
1 tsp vanilla
2 1/2 cup flour
1 1/2 cup diced rhubarb
1/2 cup chopped nuts
Topping
1/2 cup chopped nuts
1/3 cup sugar
1 1/2 tsp flour
1 Tbsp melted butter
 
Directions
1. Combine all batter ingredients with wooden spoon.
2. Fill 2/3 full, paper-lined muffin tins.  Combine topping ingredients and sprinkle over batter.  Bake at 400 degrees for 20-25 minutes.
