Soy-Marinated Perch Fillets

  • Currently 4/5
I love perch, especially lake perch...a delicate fish that just melts in your mouth...
2 lbs fresh or frozen perch or other fish fillets
1/3 cup cooking oil
3 Tbsp soy sauce
2 Tbsp wine vinegar
2 Tbsp finely chopped onion
1. Thaw fish, if frozen.  Separate into fillets or cut into 6 to 8 serving-size portions.  Place fish in plastic bag set in deep bowl.  Combine oil, soy sauce, vinegar, and onion; mix well.  Pour over fish; close bag.  Marinate for 30 to 60 minutes at room temperature, turning bag occasionally.  Drain fish, reserving marinade.  Place fish in well-greased wire grill basket.  Grill over hot coals for 8-9 minutes.  Turn fish and brush with marinade.  Grill 6-8 minutes more or till fish flakes easily when tested with a fork.
