Summer Squash & Tomato Medley

A quick, easy way to saute up the readily-available veggies from my summer garden...
Ingredients
2 Tbsp extra-virgin olive oil
1 medium zucchini cut in half-moons
1 medium yellow squash cut in half-moons
1 cup grape tomatoes, cut in half lengthwise
2 Tbsp fresh basil, shredded
Salt and black pepper to taste
 
Directions
1. Heat a saute pan over medium-high heat.  Add the olive oil.  Quickly add the zucchini and yellow squash and saute for 3-4 minutes.  Add the tomatoes and salt and pepper, heat for another minute.  Remove from heat and toss with fresh basil.  Delicious!

Makes 4 servings.
