The Maine Diner's Indian Pudding

  • Currently 4/5
This is the original recipe from The Maine Diner restaurant in Maine, where our entire family enjoyed this area favorite during our spring break vacation.  A slow baked cornmeal pudding flavored with molasses.
1/4 lb butter (1 stick, cubed)
1/2 cup molasses
1/2 Tbsp ground ginger
2 cups milk
1/2 lb brown sugar (1 cup packed)
1 Tbsp cinnamon
1 quart half and half
1-1/4 cups corn meal
Vanilla ice cream (optional)
1. Add all ingredients into a large double boiler except the cornmeal and ice cream.  When the butter in the double boiler has finished melting, add the cornmeal.  Cook for 30 minutes, stirring occasionally, until thickened.
2. Serve hot in bowls with a small scoop of vanilla ice cream in center, if desired.
