mustard, creme fraiche and white wine sauce

6 heaping tsp whole grain mustard
1 cup white wine
3 heaping tbsp creme fraiche
sea salt and pepper, to taste
small handful Italian parsley, chopped (optional)
1. Heat pan and add mustard and wine; it will steam and bubble. Let boil 1 min to reduce slightly. Add creme fraiche, bring to a boil and simmer 7-8 mins until a cream consistency; season well. Add parsley if using.
* Makes 4 servings
