  • Spiced Chicken Thighs

I made this with skinless boneless thighs tonight, and we enjoyed it with basmati. I think I might add a bit more salt. The sauce was thin, so I let it reduce for a few minutes at the end, and added a little cornstarch dissolved in water. I didn't have red wine, so I used white zinfandel and white wine vinegar. I was worried about the vinegar; it smelled strong when I added it. But there was just a faint tang by the time it all simmered together. Nice, savory, easy, quick - the rice was done at the same time as the chicken. For recipe Spiced Chicken Thighs

  • Pears or Peaches in Fragrant Red Wine Syrup

decadent dessert syrup! mulled wine and fruit. kitchen must smell extra nice after this. what's the purpose of using the parchment paper as opposed to just using a pot lid? is the lid sitting on top of the parchment, on top of the fruit instead of on the rim of the pot? thanks for the recipe.
