Pita Pizza la Mediterranee

Pita pizzas are easy, elegant fare and adapt well to a variety of seasonal produce. Serve with a green salad and a dollop of hummus, this meal is a special treat. Cheese has calcium; choose feta and real Swss for ease of digestibility.

Ingredients
8-12 spears asparagus, blanched
4 florets broccoli, blanched
4- 8 inch whole wheat pitas, toasted
2 tbsp olive oil
4 slices red onion, sliced thin
1/2 cup feta cheese
1/2 cup ricotta cheese
4 slices Swiss cheese, sliced very thin
fresh garlic, oregano and basil, to taste
fresh parsley, to garnish
 
Directions
1. Spread toasted pita with olive oil, ricotta and sprinkle with feta. Season with herbs and top with onion and vegetables. Top vegetables with 1 slice Swiss cheese and sprinkle with parsley. Broil 5 mins. or until cheese is melted.

Makes 4 servings.
