You left out a VERY important ingredient in the ingredients part. The mozzarella cheese 2 cups!!! I bought all ingredients listed got home, was adding everything together then got to step 7.4 Mozzarella. Dang!!! Just saying you should edit that so people get the whole recipe. 4-6 servings
2/3c golden raisins
1c apple cider
24c lightly packed challah or other egg based bread, cut into one inch pieces
2 golden delicious apples, peeled, cored, and finely chopped
3c milk
4oz cream cheese, diced
8 large eggs
1Tbs vanilla
1/4tsp salt
1/4tsp nutmeg
2Tbs sugar
1/2tsp cinnamon
In a small bowl, soak the raisins in apple cider for 20-30 minutes. Drain, discarding the liquid.
Spray a 13x9 pan with cooking spray.
In a large mixing bowl, combine the bread, apple, and raisins. In a blender, mix the milk, eggs, vanilla, cream cheese, vanilla, salt, and nutmeg. Pour over the bread. Toss with hands to mix well. Press into the prepared 13x9 pan. Let sit for 30 minutes or cover with plastic wrap and refrigerate overnight.
Preheat oven to 350. If refrigerated, let the dish come to room temperature for about 30 minutes. In a small bowl, mix together the cinnamon and sugar and sprinkle on top of french toast casserole.
Bake 35 minutes. Let sit for 10 minutes and then serve OR Cool, unmold, cut into portions, flash freeze them, and then place them in a freezer bag. For recipe Johnny Appleseed French Toast - Cook and Freeze
Boil water for the couscous. Add couscous to boiling water, cover, and remove from heat. Let it sit for 10 minutes.
Saute greens in a skillet while the water boils. Add 2 cans of diced tomatoes and let the greens and tomatoes cook until the couscous is ready to serve.

By far the best scone I have ever had. One question- do you buy the coconut oil in a liquid or more of a shortening type consistency? Spread a third of the bagel cubes in a 9 by 13 pan. Dot the bagels with a third of the cream cheese bits and mix in the red onion and cherry tomatoes. Repeat in tow more alternating layers. Whisk eggs with milk, salt, ground pepper. Pour the egg mixture over bagel mixture. Cover tightly and refrigerate overnight. Bake uncovered at 350 degrees for 1 1/4 hours.
