  • Moosewood Spinach Lasagna

    You left out a VERY important ingredient in the ingredients part. The mozzarella cheese 2 cups!!! I bought all ingredients listed got home, was adding everything together then got to step 7.4 Mozzarella. Dang!!! Just saying you should edit that so people get the whole recipe.   • Johnny Appleseed French Toast - Cook and Freeze

    4-6 servings 2/3c golden raisins 1c apple cider 24c lightly packed challah or other egg based bread, cut into one inch pieces 2 golden delicious apples, peeled, cored, and finely chopped 3c milk 4oz cream cheese, diced 8 large eggs 1Tbs vanilla 1/4tsp salt 1/4tsp nutmeg 2Tbs sugar 1/2tsp cinnamon In a small bowl, soak the raisins in apple cider for 20-30 minutes. Drain, discarding the liquid. Spray a 13x9 pan with cooking spray. In a large mixing bowl, combine the bread, apple, and raisins. In a blender, mix the milk, eggs, vanilla, cream cheese, vanilla, salt, and nutmeg. Pour over the bread. Toss with hands to mix well. Press into the prepared 13x9 pan. Let sit for 30 minutes or cover with plastic wrap and refrigerate overnight. Preheat oven to 350. If refrigerated, let the dish come to room temperature for about 30 minutes. In a small bowl, mix together the cinnamon and sugar and sprinkle on top of french toast casserole. Bake 35 minutes.   • Coconut Scone

    By far the best scone I have ever had. One question- do you buy the coconut oil in a liquid or more of a shortening type consistency?   • new york breakfast casserole

    Spread a third of the bagel cubes in a 9 by 13 pan. Dot the bagels with a third of the cream cheese bits and mix in the red onion and cherry tomatoes. Repeat in tow more alternating layers. Whisk eggs with milk, salt, ground pepper. Pour the egg mixture over bagel mixture. Cover tightly and refrigerate overnight. Bake uncovered at 350 degrees for 1 1/4 hours.   • Minted Rice with Garbanzo Beans

    I really wish there was a way to message the poster privately but since I see none I'm going to ask this here. How is this recipe deemed to be diabetic-friendly? Lets assume for a moment that you intend the person to use brown rice or converted rice for the lower glycemic values, brown rice has a glycemic index of 55 and a 1 cup serving of it has 45g of carbs of which only 3.5g are fiber so 41.5g of available carbohydrates which gives us a glycemic load of 22.83. Now for the converted rice at a glycemic index of 38 it has 45.2g of carbohydrates and 1.6g of fiber for an available carbohydrate level of 43.6 making our glycemic load of 16.56. No matter how you look at it I'm non-diabetic and my blood sugar would spike on the amount of starch you have in here from the rice alone, and then we get into the fact that canned garbanzo beans have a 42 glycemic index an entire can has a glycemic load of 18. Even if you cut these in half they are not diabetic-friendly.
