Pasta from scratch

Easy and cost effective
4 eggs
2 1/2 cups of al purpose flour
10 ml salt
10 ml water
20 ml olive oil
1. In a food processor add all the ingredients and work until it forms a ball
Do not over work the pasta
Take it out and on a floured work surface knead the pasta for about 5 minutes
Divide in to four pieces 
Set machine to 9 and roll out 5 times on this setting so that the gluten expands you will see the pasta getting light in colour. 
Put the setting on 8 and roll once
Repeat until setting 1 and the pasta is thin.
Cut as desired 

In a large pot boil water and add the pasta for one minute, place in ice cold water and strain. Cover the pasta with a little olive oil and store in a tight lid container until use.

Always leave the extra pasta covered before putting them through the pasta machine
