PB & J Cookies

These are perfect for school lunches for the kids.

Yields 3 1/2 dozen
Ingredients:
1/2 cup butter (softened)
1/2 cup creamy peanut butter (I am a JIFFY mom!)
1 cup firmly packed brown sugar
1 egg
1 tsp vanilla extract
1/2 cup all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
favorite flavor jelly or jam
Directions:
1. Preheat oven to 350 degrees.
2. In large bowl, cream the butter, peanut butter, and sugar together.
3. Beat in the egg and vanilla until fluffy.
4. In separate bowl, combine flour, baking soda, baking powder, and salt. Stir into creamed mix.
5. Roll dough into 1 inch balls and place on lightly greased baking sheet.
6. Indent center of each ball with thumb and fill with a small dollop of jelly.
7. Bake 10 to 12 minutes or until cookies are lightly browned.
