Perfect Deviled Eggs

I have had lots of deviled eggs since its the first finger food I pick up at events, and it seems everyone makes them just a little different. My mom's have always been the best though!

Yields 1 dozen
Ingredients:
6 hard boiled eggs, peeled
1/2 tsp salt
1/2 tsp dry mustard
1/4 tsp pepper
3 tbsp mayonnaise
paprika to taste
Directions:
1. Cut peeled eggs lengthwise into halves.
2. Slip out yolks and mash with a fork in a small bowl.
3. Mix in salt, mustard, pepper, and mayo.
4. Fill eggs with yolk mixture, heaping lightly.
5. Sprinkle with a little paprika.
6. Cover and refrigerate no longer than 24 hours.
Notes:
To make peeling even easier, boil the eggs for 30 minutes then plunge into icy water.
