Maple Mustard Pork Chops with Grilled Apples

Ingredients:
1/2 c maple syrup
4 T (1/4 c.) spicy brown mustard
1/4 c apple cider (or applesauce)
1/4 med. onion, finely chopped
1/2 t allspice
1 t ground cumin
8 center-cut boneless pork loin chops, 1/2"-3/4" thick
Extra-virgin oilive oil, for drizzling
Grill seasoning blend or salt and pepper to taste
3 golden delicious apples, sliced across into 1/2" rounds, with core and peel intact
juice of 1/2 lemon
1/2 t freshly grated or ground nutmeg
Directions:
1. Combine syrup, mustard, cider, onion, allspice and cumin in a small saucepan and cook over moderate hear, 7-10 mins, until sauce begins to ticken a bit.
2. Coat chops lightly in oil, season with grill seasoning blend or salt and pepper, and cook on grill pan of your choice, 3 minutes on each side. Baste chops liberally with sauce and cook, 2-3 mins more, then transfer to a baking sheet. Baste again with sauce and place ina hot oven to finish cooking them. Bake 10-12 mins, until apples are ready to come offo the grill pan.
3. Coat apple rounds with lemon juice and a drizzle of oil. Season with grill seasoning or salt and pepper and a little nutmeg. Cover grill pan surface with as many pieces of apple as possible. As the tender, remoce and replace with remaining slices. Apples should cook 3 mins on each side. You don't want them too soft, just tender.
4. Serve chops with apples along side.
Notes:
Preheat oven to 350.
