deconstructed Amish friendship bread

light, nutty, a healthy dose of whole wheat and just sweet enough to satisfy my tastebuds. after a few rounds of taking apart a few Amish Friendship Bread recipes, i now have something that is much more yummy to me.

took out the pudding mix. seems to defeat the purpose of getting back to basics and going through the arduous task of slowly fermenting the way they used to before instant yeast...and than use instant pudding. plus i never imagined instant pudding as being very Amish. added a little applesauce to give it more moisture with a lighter taste. removed the original whole cup of sugar to make a more bread-like crumb, more airy and less dense. took out the baking powder as it was superfluous (possibly will reintroduce it to offset the over-browning of the crust, which is possibly due to the lone baking soda). subbing 1 cup of the all-purpose with whole wheat flour for a nuttier flavor.

to be used with Amish Friendship Bread starter.
Ingredients:
1 cup Amish Friendship Bread Starter*
1/2 cup vegetable oil
1/2 cup applesauce
1 teaspoon vanilla extract
3 large eggs
1 cup (135 g) all-purpose flour
1 cup (145 g) whole wheat flour
1 1/2 teaspoon cinnamon, ground
1/2 tsp allspice, ground
1/8 tsp nutmeg, ground
1/2 teaspoon salt
1/4 teaspoon (1 g) baking soda
1 1/4 tsp (4 g) baking powder
1 cup walnuts, chopped
1/2 cup raisins

Special equipment
1 8x2-inch square baking pan
Directions:
1.  Preheat oven to 350º F (175º C). Grease and flour pan.
2. In a large bowl, combine the starter, oil, applesauce, sugar, eggs and vanilla extract.
3.  In a separate medium bowl, whisk together flour, ground cinnamon, salt, baking soda and baking powder.
4. Stir dry ingredients into the starter mixture until just combined and then fold in nuts and raisins.
5. Pour batter into prepared pans and bake for 45-60 minutes or until a toothpick (or chopstick) inserted into the center of a loaf comes out clean.
Notes:
*Subbing the starter with buttermilk or yogurt could be an option if you are extremely anxious and want to have Amish Friendship Bread right now before the starter is ready.

Baking soda reacts with the applesauce and the acidic starter to give a bit of a lift to the bread. Without it, you will have a dense brick. Though you are using a "starter" it's not a true starter in the sense that you can remove all other leavening ingredients; I've discovered that when I took out both baking soda and baking powder.
