Scotch Irish Cake

From The Downyflake Restaurant in Nantucket, MA
Ingredients:
1 1/4 Cup Boiling Water
1 Cup Quick Quacker Oats
1 Stick Butter
1 Cup Sugar
1 TSP Baking Soda
1 1/2 Cup Flour
1 TSP Cinnamon
1 Cup Light Brown Sugar
2 Large Eggs
6 TBSP Butter
1/2 TSP Vanilla
1/2 Cup Coconut
1/4 Cup Whole Milk
1/2 Cup Sugar
1/4 Cup Finely chopped pecans
Directions:
1. Pour Water over oats and butter.  Cover and let stand for 20 minutes

2. Combine sugar, baking soda, flour, tsp cinnamon, light brown sugar and 2 eggs with spoon.  Bake in 13x9 well greased pan for 30-35 minutes at 350 degrees

3. For topping - heat butter, vanilla, coconut, milk, sugar and nuts.  Spread on warm cake.  Put under broiler to brown very lightly.
