Lobster Rolls

The key is a hot, freshly grilled roll and cool, creamy lobster salad. Buy the lobster meat precooked and shelled if you're feeling lazy, or sub in shrimp if you're on a budget.

Ingredients:
3/4 cup mayonnaise
1 1/2 tablespoons lemon juice
salt & black pepper
3 tablespoons chives, chopped
4 - 4 1/2 cups lobster meat, cut into chunks
2 tablespoons butter
6 brioche rolls or top-sliced hot dog buns
3 ribs celery, sliced paper-thin
Directions:
1. In a medium bowl, whisk together mayonnaise, lemon juice, salt and pepper to taste, and chives.
2. Add lobster meat and toss to combine.
3. Melt butter in a large, flat pan, and grill the rolls in the pan, cut side down, until golden-brown, pressing lightly with a spatula.
4. Divide lobster salad among the buns, and top with celery slices. Serve immediately with oven fries.
