Spicy Yogurt Sauce

Make this sauce with Baked Stuffed Potatoes or use as a topping for steamed veggies.
Ingredients:
1 cup chopped onions
1-2 chiles, minced
2 tablespoons vegetable oil
1 teaspoon ground cumin seeds
1 teaspoon ground coriander seeds
1 large tomato, chopped (about 1 cup)
2 teaspoons flour
1 cup plain yogurt
salt to taste
Directions:
1. Sauté the onions and chiles in the oil until tender, about 10 minutes.
2. Add the cumin and coriander and sauté for a minute, stirring constantly.
3. Stir in the tomato and flour and cook for about 2 minutes.
4. Finally, stir in the yogurt.
5. Heat the sauce thoroughly, but do not allow it to boil or the yogurt will curdle.
6. Add salt to taste and serve.
Notes:
From the Moosewood Collective's Sundays at the Moosewood. Serves 4.

It was good--although it's helpful to keep in mind that some people might like to have this sauce served on the side so they can decide the quantity they would like!
