Apple Harvest Oatmeal

Courtesy Meatless Mondays
Ingredients:
1 1/2 cup soy milk
1 1/2 cup water
1 1/2 cup rolled oats (not instant)
1+ cup chopped apple
2 tbsp raisins
2 tbsp pecans, chopped
2 tbsp brown sugar
1/2 tsp cinnamon
Directions:
1. In a medium saucepan, bring soy milk and water to a boil.
2. Stir in remaining ingredients and cook until thick.
3. Cover, let stand a few minutes, and serve.
Notes:
Serves 2-3.

Substitution or addition of dried fruit (apricots, dates, cranberries, etc.) and/or fresh fruit like pears is easy.

Using vanilla soy milk will add a hint of sweetness - you might cut down on sugar if you're so inclined.
