Roasted Figs with Honey and Rosemary

Ingredients:
1 pint fresh figs
1/3 cup honey
4 sprigs fresh rosemary
fresh cracked black pepper
crackers (for serving)
cheese like mild chevre, St. Andre or other (for serving)
Directions:
1. Heat oven to 375 degrees.
2. Wash and stem the figs. Slice in half and arrange cut side up in a baking dish.
3. Drizzle the honey over top and place half a sprig of rosemary between figs.
4. Grind fresh pepper over everything.
5. Roast for about 15 minutes, or until the honey is just beginning to get dark and carmelized. The figs should not be too soft - they need to be firm enough to pick up with your fingers.
6. Let cool for about 10 minutes before serving.
7. Arrange on serving plate with cheese and drizzle juices and honey left in baking dish over both figs and cheese.
Notes:

Make open-faced sandwiches on the crackers with cheese, then a fig.
